The history of Pączki

Pączki are a traditional Polish pastry with a rich history dating back to the Middle Ages. Originally, these buns were savoury and filled with meat or pork fat, eaten in Polish courts and villages as a symbol of prosperity. With the arrival of sugar and the influence of French patisserie in the 16th and 17th centuries, the recipe evolved into a sweeter version, more similar to what we know today.

The tradition of eating pączki is especially associated with Tłusty Czwartek – known as «Fat Thursday» – a Polish holiday that precedes the start of Lent. On this day, it is customary to enjoy these treats as a form of indulgence before the fasting period begins. Pączki are made from a rich dough containing eggs, butter and sugar, and are deep-fried until golden and fluffy.

One of the most traditional and cherished fillings is rose petal jam. This preserve, made from wild rose petals, offers a delicate, floral flavour that distinguishes Polish pączki from other varieties of doughnuts. Although this filling is less common nowadays, it remains a symbol of traditional Polish baking.

The recipe for pączki has been passed down through generations, and their preparation is considered an art in many Polish households. Besides rose jam, other filling options include plum, strawberry or raspberry jam, and vanilla or chocolate cream. Still, the version with rose jam remains the most emblematic and deeply rooted in tradition.

Today, pączki have spread beyond Poland and become popular in various parts of the world, especially in communities with a strong Polish presence. In cities like Chicago and Detroit, it is common to find bakeries offering these pastries during Mardi Gras – or «Fat Tuesday» – adapting the tradition of Tłusty Czwartek to the local calendar.

Despite modern variations, pączki filled with rose petal jam continue to be a testament to Poland’s rich culinary heritage. Their unique flavour and centuries-old history make them a dessert that not only delights the senses, but also connects people to the traditions and celebrations of Polish culture.
